The sweet potato is a flowering plant belonging to the taxonomic family Convolvulaceae. It grows as a herbaceous perennial vine and is best known for its tubers (modified stems) that are popular vegetables. They resemble ornamental plants called morning glory with leaves shaped like hearts and also has medium size of flowers.

Reproduction

Like potatoes, the sweet potato is propagated by asexual reproduction using stem or root cutting or adventitious root called "slips" that grow from the roots during storage. The amount of time it takes tuberous roots to grow is different based on the cultivating conditions. Some tuberous roots finish growing in two months but others sometimes grow completely in 9 months. If sweet potatoes have more than 11 hours of sunlight, they do not flower. The seeds are only used for breeding.[1]

Ecology

The 127,000,000 tons of sweet potatoes are living in the world and 90% of sweet potatoes are growing in China. The countries where sweet potato production is greatest, treat the sweet potato as a staple. The Solomon island, Burundi, and Uganda produce some of the greatest per-capita tonnage of sweet potato. The U.S. also is producing significant quantities of sweet potatoes.[2] North Carolina is the number one producer of sweet potatoes in U.S. The top five countries, Calgoun, Chickasaw, Pontotoc, Yalobusha, and Panola also produce many sweet potatoes and they held sweet potato festival in November, which is the big national festival. The rest of country also has sweet potato festivals such as Kentucky, and Tennessee but they have festival at different times.[3]

Uses

The sweet potato contains Vitamin C, Vitamin B6, Complex carbohydrates, and a Vitamin A.[4]In the scientific research, sweet potato is introduced as type of vegetables, and it has very good nutriments. The sweet potato can be used in many ways. For examples, there are Baked sweet potatoes, Sweet potato fries, Sweet potato leaves, Steamed/ Boiled chunks, Sweet potato chips, Raw sweet potatoes, and Sweet potato butter. In Korea, also people get starch from the sweet potatoes and they use them for making food. Many restaurants are selling baked potatoes with butter and salt, and many people like it. The sweet potato fries are very common food for American and Korean.[5]
